Pita Bread + Indian Paneer?

How do you make your pita bread? I personally adore the combination of the traditional paneer recipe and slightly-toasted pita bread with a cup of hot chocolate! 

Servings: Makes 4    |    Difficulty: Easy!

You will need...


 Pita bread pockets - I like Mission Pita Bread Pockets Plain from Woolworths


 Scrambled Paneer


Butter


Nando’s Spicy Sauce




1)    Prepare the scrambled Paneer and set aside to cool. (Recipe below)

2)    Toast Pita break lightly with butter.
3)    Use a knife to evenly spread the Nando’s spicy sauce in the inner-walls of the bread.
4)    Depending on your preferred amount of filling, insert the scrambles Paneer in the bread.
5)    Grab your favourite drink to serve as a perfect side!

Scrambled Paneer Recipe (from vegrecipesofindia.com):


Ingredients 



  • 200g paneer, crumbled - I prefer the Sharma's Kitchen brand. 
  • 1 medium sized red onion, finely chopped 
  • 2 medium sized tomatoes, finally chopped 
  • 1-2 green chillies or as required, finely chopped 
  • 1tsp garlic-ginger paste
  • 1/4tsp turmeric powder
  • 1/2tsp chilli powder
  • 1/4tsp garam masala powder
  • 1/2tsp cumin seeds 
  • 1.5tbsp oil 
  • salt, as required 
  • coriander leaves, for topping 

Steps 
1) crumble the paneer and set aside 
2) chop the onions, tomatoes and green chillies 
3) heat up the oil 
4) add cumin seeds. once they've turned brown in colour, add onions and fry until translucent. 
5) add garlic-ginger paste and chopped green chillies
6) fry until you can no longer smell the ginger-garlic paste 
7) add tomatoes and fry until they become soft
8) add all the dry spices - turmeric, red chilli, garam masala
9) add the crumbled paneer and let cook for 3-4 minutes 
10) lastly, add chopped coriander leaves and mix
11) serve
